How To Care For Your Carbon Steel Knife

Carbon steel is often the preferred choice for professionals, but carbon steel will rust.
Proper care of carbon steel involves a bit more day-to-day maintenance.
- Hone your knife regularly at a 17-20 degree angle to keep your edge centered.
- Keep your blade clean and wipe down your knife often while you prep.
- Never leave your knife sitting wet.
- Wash your knife by hand. Never put your knife in the dishwasher.
- Hand-dry your knife immediately after washing with a clean towel.
- If you notice any rust spots developing, rub with mineral oil and let dry.
- Store the knife in a dry place and keep oil it regularly with mineral oil.
- After your knife develops a health patina, you will not need to be as careful over time.
